My passion for gastronomy began in a humble way, from waiter to ham cutter in a small delicatessen. It was there that I discovered my love for authentic and exclusive flavors, and the Iberian tradition that inspired me to delve into the cuisine of excellence.

Over the years, my career led me to assume the role of manager at a renowned restaurant on Sweden Avenue, where I was able to merge my knowledge in gastronomy, management and service, creating memorable experiences for our diners.

Today, with a wide experience in different gastronomic areas, I have turned all my passion into a new project: a restaurant dedicated to the exaltation of the Iberian product. Here, we combine tradition and innovation to offer a unique culinary experience, carefully thought out in every detail, from the ingredients to the wine pairing.

Simone Gagliardi

My passion for cooking began at the age of 14, working in a butcher shop that offered catering and private events. During that time, I began my culinary studies, which I completed at 18, while continuing to learn in the same establishment.

With the desire to deepen my knowledge of the culinary art, I traveled through Scotland, England and Italy, enriching my training. At 21, I settled in Tenerife, where I worked in prominent places such as the Gran Lujo Bahia del Duque Hotel and El Vecchio restaurant, as well as specializing in gourmet gastronomy, fine dining and nutrition.

It was in my forties when I met Manolo, who introduced me to the fascinating world of the Iberian adventure, a project that today I lead with passion. As a Chef, I define myself as a self-taught person committed to innovation, creativity and fermentations.

Jonathan, 100% Canarian, began his journey with us as a kitchen assistant, where he quickly stood out for his dedication and eagerness to learn.

Following closely the experience and leadership of our chef Simone, Jonathan has grown so much professionally that he has become her right-hand man, an essential pillar in our kitchen.

His speed, punctuality and strong commitment are just some of the qualities that define him. Always available and attentive, his constant presence in the kitchen ensures that every detail is executed with the highest precision.

With a passion for excellence, Jonathan is a key player in the creation of dishes that combine tradition and the avant-garde, always bringing his energy and dedication to the team.
